STRAWBERRY GOAT CHEESE SUMMER SALAD
Summer always brings sunshine, hot days, family, friends, and refreshing recipes. This recipe is our constant go-to for any grill out, social gathering, picnic, or even a bring your lunch to work day! It fills the tastebuds with sweet fruit and zesty dressing that will leave you feeling cool and refreshed on any summer day!
For the salad:
1 package (5 ounces) organic spinach
8 ounces strawberries, cut to your desire
1 large avocado, thinly sliced
1/2 cup goat cheese crumbles
1/3 cup raw crushed pecans
For the dressing:
3 tablespoon balsamic vinegar
1/4 cup olive oil
1 garlic clove, finely minced
1/2 teaspoon dijon mustard
1/2 tablespoon strawberry jam
Freshly ground salt and pepper, to taste
In a mason jar or small bowl, combine all dressing ingredients. Shake or mix well. Add salt and pepper to taste.
In a large bowl, toss together spinach, goat cheese, and pecans. Feel free to toss in dressing now or set out for individual servings. Top with strawberries and avocado slices before serving. Serves 4.
